Despite the history of consuption of snail goes back to prehistoric ages, it’s never consumed in Turkey. However, Turkey has a significant share of export volume thanks to high demand from Europe.

Helix Aspersa Maxima, also known as Garden Snails, are a member of the Helicidae family. They reach reproductive maturity in 5-7 months, a much shorter agricultural cycle than its other species. The Helix Maxima snail weighs 15-40 grams and lays 120-180 eggs. These economically valuable animals are the second largest member of the animal kingdom with around 80,000 species.

Due to their high level of protein, low fat and cholesterol, and high mineral content (including calcium, iron and magnesium) there is a constant increase in consumption demand. They also produce large amounts of glycolic acid, vitamins, natural antibiotics, elastin and alnatoin. A mixture of these natural ingredients is a perfect treatment for skin diseases. Snail secretion is also used in the production of drugs that treat asthma and tuberculosis.
